Über uns

Hannah & Flore

Kräuterkollektiv, is a partnership between two chefs, Flore Granboulan and Hannah Bouloudis. It is a Berlin based high quality vegetarian catering company, which offers different services: private dinners, event catering, as well as food concepts for special events.

Our objective is redefining vegetarian cuisine for omnivores and herbivores with menus which are neither imitating nor adjusting existing meat based cuisine, but a playful and eclectic mix of influences. Our aim is to abolish any preconceptions about vegetarian food by producing satisfyingly and comforting meals, yet nutritionally balanced. Our priority is to have emphasis on local, seasonal, and organic products.

We´re two professional chefs, and we have very different cooking backgrounds. Flore has a traditional culinary background, after training in France, she has worked in a variety of kitchens serving dishes from Parisian nouvelle cuisine to Neapolitan mama´s food. Hannah comes from the exclusively vegetarian cooking world, trained in Brighton´s best veggie venues as well as in Patisserie.

Some of our products are totally original, some are inspired by traditional recipes from our homeland or other countries from our travels, and not often found in Berlin.

Unser Stil definiert die vegetarischer Küche neu; nicht nur für Vegetarier. Mit unseren Menüs imitieren wir keine Fleischgerichte, sondern verbinden und kombinieren vielmehr verschiedenste Einflüsse spielerisch miteinander.

Unser Ziel: Vorurteile und Missverständnisse gegenüber der vegetarischen Küche zu dekonstruieren und gleichzeitig gesunde sowie wohlschmeckende Gerichte zu schaffen. Regionale, saisonale und biologisch angebaute Zutaten sind für uns von höchster Priorität.

Wir sind zwei professionell ausgebildete Köchinnen mit unterschiedlichen kulinarischen Wurzeln:

Nach einer traditionellen Kochausbildung in Frankreich hat Flore in verschiedensten Küchen gearbeitet, von Nouvelle Cuisine in Paris bis hin zu Neapolitanischer Hausmannskost. Hannah kocht ausschließlich vegetarisch, und wurde in Brightons besten vegetarischen Restaurants und in Patisserie ausgebildet.

Manche unserer Produkte sind keine kompletten Neukreationen, sondern eher inspiriert von traditionellen Rezepten, die wir von Reisen und aus unseren Heimatländern mitgebracht haben.

Sei es ein privates Abendessen bei Ihnen daheim, oder eine Lieferung zu Ihnen nach Hause – wir können Ihnen das passende Menü zusammenstellen.

Sie können sich hierbei eines unserer Beispielmenüs aussuchen, wir kommen Ihnen aber auch gerne kulinarisch entgegen. Wenn das Menü beispielsweise glutenfrei oder für Diabetiker geeignet sein, teilen Sie uns dies einfach mit.

Aspargus!

Spargel Spargel Spargel!

One thing no one can miss when moving in Germany is the absolute passion of the Germans for aspargus, the first sign of the spring! I guess it would be hard to find one restaurant in Berlin who doesnt´t propose aspargus on the menu when it´s on season… And as it season is so short, it´s hard to be tired of it!

This delicate vegetable grows a lot in Germany, and in Europ. It was cultivated since the Antiquity, and we can even see it on some egyptian drawings!

Aspargus is also super healthy so no reason not to enjoy it! Very rich in fibers, its the best you can offer to your digestive system… It´s also very low in calorie, and rich in potassium, calcium and vitamins.

So quick, try this very easy and delicious recipe!

 

ASPARGUS FLAN:

 

500g asparagus – about 410 g after peeling etc

½ lemon juice

2 generous pinch salt

1 generous pinch cracked black pepper

90 mL soy cream

½ tsp agar agar

 

  1. Simmer the asparagus in salty water until tender
  2. Drain them and pat dry them
  3. Put in the mixer bowl with the lemon juice, salt, pepper, cream and blitz till smooth
  4. Dissolve the agar in 2 spoons of water, then boil it
  5. Add to the mix and blitz again
  6. Put in a long cake mould with plastic underneath
  7. Let cool down in the fridge for 3-4 hours before to take out of the mould and cut
  8. This recipe can be done the day before and stored in the fridge overnight

 

 

When it´s set, take the flan out of the mould and slice it (you can also use individual moulds)

We like to serve it with a little salad topped with raw aspargus shavings.

"The meal was absolutely phenomenal! I was a little hesitant about a purely vegetarian meal at first, but Hannah and Flore's cooking was spectacular. They were also extremely well organised, coordinating everything independent from me (which was very helpful, as I was travelling a lot in the two weeks before the dinner). Being coeliac, I went straight for their gluten-free bread, which is the best I have tasted so far - but also all the other dishes were just as fabulous. I can totally recomment them and will hopefully have an excuse for booking them again in the future :)"
